Any ideas??

I sent my other half to Asda the other day without me, and with no list

He came back with . . . . a thai selection pack & I haven't the foggiest idea what to do with it to turn it into something we'll eat

It has in it 3 birds eye chillies, 3 stalks(or whatever you call them) of lemongrass, 3 shallots, 6 cloves of garlic and galangal (which I have never heard of!)

Does anyone have any tasty ideas for something I could whip upo using those items? Possibly something chickeny

Have you got chicken breasts? If so, slice them or cube them, then marinade them:

Thinly slice the chillis (take out the seeds if you don't like it really hot)
Take off the hard, outer leaves of the lemon grass, then finely chop the stalks
Finely chop the shallots and the garlic
Peel and finelly chop the galangal (it's like root ginger)

Stir the chicken into this. If you've got some fish sauce or soy sauce add a splash of that, or some fresh lemon/lime and possibly a little bit of sesame oil.

Season with some black pepper.

Marinade for around 30 minutes, then stir fry and serve with boiled rice or noodles. If you've got some fresh coriander chop this and stir it in just before serving.

BecauseIAWI's advice is spot on

You could also add veg to the stir fry if you want to bulk it out - carrots, onion, sugar snap peas, whatever you like in stir fries. Or you could have a veggie stir fry if no chicken.

Would work equally well if you want to jazz up some white firm frozen fish (although not in a stir fry). MArinade and then grill.

Sorry I've taken so long to reply, was on limited time at the library when I posted.

BIWI, thanks for the idea, I'll get some chicken this afternoon and give it a go for tea for myself and my fella. I had no idea what the galangal was, that one had me baffled. Handy to know it's like root ginger, have made a note of that in case I come across it again/

Stirling, link much appreciated, I'm going to print a couple off while I'm at the library for future reference. I've not been around for ages as our laptop is knackered & can't be fixed so we're saving (but not very well) to replace it. There's no suggestions or anything on the pack, it just tells you how much it is, what's in there & the bbe date.
