Would you eat ricotta cheese 2 days after it's use by date?

As in to warm through pasta and reheat the next day. It smells ok!

I'm funny about cheese and personally I wouldn't do it. If you were eating it now then maybe it would be OK, but to warm through and then re-heat.....nope.

I definitely would.

Absolutely. It's cheese - even if it's "turned" it is fine. And it's highly unlikely to be bad. Enjot.

yes, until the surface has gone yellow and cracked then it has reached perfection.

Not only do I eat it, I give it to my DS (10m)
