How long for steak?

I have a couple of steaks about 1 inch thick, how long should I cook, pan fry (hate that term, how else can you fry) and how high should the heat be to achieve medium to well done please?

NO idea on the time but according to Gordon R, press your cheek in the middle for equiv of rare, chin for medium and middle forehead at eyebrow level for well done.

Well, you can deep fry - pan fry means shallow fry in a frying pan.

If you want them medium I would do around 4/5 minutes per side

Don't waste good steaks by burning them doing them well done!

sadly trying to convince Dh that they don't have to be black is a losing battle I'm afraid so I want to cook them really well in the hope he'll love them. Thank you

Really hot pan and 3-4 minutes per side I'd say.

Rub steaks with a bit of oil, and season with black pepper. Get your pan hot, put in the steaks. Turn the steaks after a couple of minutes, you should have a nice crust, turn the heat down to medium, turn again after another couple of minutes, and then turn again after that. Give them a prod as per cluckyagain's post to determine if they're cooked to your liking.

When they are - let them rest in a warm place for ten minutes. Even if they're medium to well done, they should still be juicy and tender if the meat is good, and they have been rested before eating.

Well I wave mine at the frying pan and then eat it. TBH mine to be hacked off a cow's backside and slapped on a plate and it would do me! (tis the french blood in me)

Whatever you do, resist the urge to poke and prod them, just turn the once after the 3-4minutes. That is a sure fire way to make steak tough.

Well that has to be the best steak I've ever cooked (preen)

I got the pan really hot and put the well seasoned steak in, turned them after about 4 minutes and turned the heat down a notch, gave them another 3-4 minutes and stuck pan in the pre warmed oven while I sieved potatoes and finished off the mushrooms.

Served up with a big bowl of salad, yummy!

Dh was finished his way before me and said he really enjoyed it.

Another tip is to have the meat at room temp before cooking (of vital importance if you like it more on the rare side otherwise it will be cold in the centre).
