potato salad help please

Hello. I am going to a bbq tonight and I am taking amoungst other things potato salad. I have not got enough mayo to do the job but I do have some long life double cream. Will this work or be a disaster? Can I mix the two together. Any help please? Thank you

that sounds horrible, but i do hate cream, can you just not have a very mayo potato salad, i'd much rather that

no dont mix cream and mayo will be rank.add onions and/or herbs?

urgh no sounds a bad idea agree with Coookie. Add lots of finely chopped spring onions and sprinkle with fresh mint and chives if you have them.

do a mix of vinegar and oil, and add it to the potatoes when they are still hot. turn them about in the mix, then add mayo/bit of cream and chives. yum

Cold potatoes just dressed with olive oil are always nice. Mint/chives/parsley or spring onions would be a lovely garnish.

Mayo mixed with natural yogurt makes a good dressing for potato salad too.

Yes a bit of olive oil will do the trick. You can do a potato salad without any mayo. Mix up some olive oil and a bit of lemon juice, chopped parsley and chives/spring onions. Season well. Yum

no, why don't you do a vinaigrette instead. Have you got olive oil, white wine vinegar and perhaps some dijon? put, say teaspoon of dijon and then whisk in three part oil to one part vinegar. Add the oil and vinegar slowly otherwise it splits, but it doesn't really matter if it does, still tastes nice. Put it on the potatoes while they're still hot, so they absorb it better. Add chives or mint?
