meal plans for the week? whats everyone elses menu?

im just doing mine (as we had leftovers yesterday) were are tryiny to use up all the odds and sods in the cuboards and freezer, just being nosy and out to pinch some ideas so what is evryone else doing this week?

Today - something on toast as we went out for lunch
Tomorrow - pasta with roasted vege and salad
Thurs - potato dauphinois with veggie sausages and savoy cabbage
Fri - risotto with salad and roasted asparagus
Beyond that - not a clue

garden veg risotto; spinach and potato curry; chard and cheese lasagna; leek, mushroom and potato pie; sausages, wedges and cauli cheese; chips and hm curry sauce, beetrrot, carrot and orange soup, crusty bread.

Thus uses up the veg from my box and the stuff that's ready in the garden this week.

lunches are: beanburgers; polenta with tomato and garlic sauce; tuna pasta salad; hotdog and sweetcorn pasta; new potatoes with beans and cheese:lentil sloppy joes; eggy rice with peas and onions.

Fri- sausages with leek and potato bake
Sat- homemade kebabs and salad
Sun- chicken fajita nachos

Tomorrow - chicken curry (again I froze last week)
Thurs - Pasta with tomato sauce, tuna & Olives
Fri - salmon fishcakes, chips and peas
Sat - sausage and mash
Sun - eat out

Today: broccoli and stilton soup (need to use up stilton in freezer) with left over treacle tart for afters
Thurs: spag bol
friday: tis a special meal so cold meats and cheeses and olives and stuff.
Sat: egg and chips.

thurs - chicken curry and rice
Fri - fishfingers and wedges for dc, tuna salad for me
Sat - lunch homemade soup, at friends for dinner
sun - lamb chops and roasted pots and veg
Mon - jacket cheese and beans
tues, drumsticks with rice and peas

I have just finished my online shop, so for once I have a plan

Eating mostly veggie this week as we are going away for a week at the end of the month and need to save cash. Most of the staples (grains, beans etc) we had in already. DH gets back late so we often give DD (2) leftovers from the previous night.

  • Quinoa with grated carrot, fried courgette, beetroot, cherry tomatoes, goats cheese. DD scoffed the leftover quinoa the next day with cauliflower, broccoli, peas and sweetcorn.
  • Burgers with bacon, avocado, cheddar, cherry tomatoes and rocket (burgers were in freezer)
  • Homemade dahl and rice (did in slow cooker last week, froze). Dd had pasta with bacon and tomato sauce, and leftover rice egg-fried next day with veg.
  • Spaghetti with rocket, chilli, parmesan and lemon
  • Veg stir fry (carrot, courgette, leek, onion, mushroom). DD will have omelette.
  • Felafel with rocket, feta and humous in pita bread. DD will nibble with carrot and cucumber batons.
  • Frittata with cheddar and veg (leftovers for DD following day)

Saturday- chciken tikka masala and the works
Sunday- (Indoor) BBQ at my Mums
Monday- stuffed peppers with halloumi
Tuesday- chickpea and couscous stew type thing
Wednesday- out
Thursdat- mushroom stroganoff

thereistheball Please could I have your recipe for Dhal? I have one but found it a bit bland so i would be interested to see another?Thank you!

sat - porka nd apricot burgers with p0otato wedges and salad
sun - beef and spring green stirfy with rice
mon - macaroni cheese with ham and asparagus
tues - chicken tikka and veg rice

Wednesday was Sausages, potatoe wedges and extras
Tonight is cheesy pasta
Friday Coronation Chicken
Saturday Bacon and Onion Hotpot
Sunday Corned Beef Hash
Monday Omelettes, Salad and new potatoes

Sat/Sun/Mon I may change the order depending on my mood

Dahl recipe:

400g red lentils
a chopped onion
2 cloves of garlic (I keep garlic ready-chopped in the freezer)
2 teaspoons ground turmeric
2 teaspoons grated fresh ginger (I also keep this in the freezer and grate as needed)
2 bay leaves
1 cinnamon stick (I left this out)
2 teaspoons ground cumin
1 teaspoon ground coriander (for these two I use whole seeds and pound them myself)
1 teaspoon mustard seed
2 teaspoons hot chilli powder (vary according to taste)
750ml veg stock (I use reduced salt Marigold buillion powder)
1 litre water

Chuck the lot into the slow cooker and do on low for 4 hours. Will be quite soupy but delicious over rice. You can stir in some garam masala at the end for extra flavour if you want. I added half a head of cauliflower an hour before the end, which was delicious - much longer and it would have disintegrated but it still had some bite and retained its own flavour.

With fewer spices and some bacon bits this would make a delicious thick soup.

Today - Slow braised pork with chorizo and lemon herb crumbs plus roast paprika potatoes and veg.

Tomorrow - Beef Kofta curry

Sunday - roast chicken with veg

Monday - Spanish chicken (with the leftover chicken)

Tuesday - Roast lemon chicken with tagliatelle (with the leftover chicken)

Wednesday - Tomato and Thyme cod (well whatever white fish we have in freezer)

Thursday - homemade pizzas - using up whatever's leftover as toppings

Friday = shopping day!

Shopping list is
Butchers: whole chicken
diced pork
beef mince

and apart from veg the rest is cupboard/freezer stuff.

Lunches is all what we've got in.

I like the look of that dhal recipe.

Been looking for a good one.

Also I like idea of keeping root ginger in freezer. Am gonna give that a go.

Yesterday-omlettes
today-moussaka
sat-chicken with mozzarella and pesto
sun- lamb shoulder slow roasted
Mon-fish pie
tues-sausage casserole and mash
wed- meatballs and spaghetti
thurs-another chicken[thighs] meal
fri-spaghetti and [basics] prawns with garlic and chilli. very cheap and yummy
Sat- chilli made last week and frozen
Sun-meatballs again with chips and gravy.
Mon-chips,beans and eggs.

Lunches are lentil soup, sandwiches and eggs in one form or another.

lazy cabbage rolls are basically the lazy way of making traditional, Ukrainian style cabbage rolls. (ie you don't have to stuff/roll them). They also have the advantage that the DS LOVE them!

we are on one serious economy drive this month so they are on the meal plan so that we can use up half a huge cabbage in the fridge and a large bag of rice. There are lots of different recipes but it's pretty much like this:

MON - Chicken Thai green curry & rice
TUE - Chilli & Soy marinated salmon w/ noodles & steamed green veg
WED - Haddock (baked with herbs, lemon & white wine) w. garlic mash & steamed green veg
THU - Baked potatoes + veggie chilli w/ soured cream
FRI - King prawn stirfry & rice

Weekday lunches are sandwiches & fruit for all

SAT
Lunch: Ackee & saltfish
Dinner: Homemade chicken curry, veggie curry, lentil dahl & rice w/ chapati & raita
SUN
Lunch: Homemade veggie soup & crusty bread
Dinner: Roast chicken with roast potatoes & roast parsnips + steamed peas, green beans, broccolli, leeks & carrots

Okay - have planned a few more since my earlier post.

Tonight - the risotto that we didn't have last night because we had wedges instead.
Tomorrow - roast potatoes, stuffing, vege, veggie sausages.
Monday - Thai curry and jasmine rice, with cashews
Tuesday - cheese and potato pie with rustic peas
Wednesday - pasta with homemade pesto
Thursday - chick pea curry and rice, with yoghurt and a salad
Friday - baked sweet potatoes with caribbean pasties and corn on the cob.
