Roast chicken leftovers, ideas please!!!

Not a huge amount left over but enough for one meal. I am stumped for ideas - please inspire me!!

Nigel Slater has got a good roast chicken risotto in one of his books.

Tonight we had a sort of chinese fried rice wit hveg and the last of the roast chicken - that works well too.

I usually do a stir fry, a curry or my favourite is a chicken and mushroom (or other veg) pie. Mmmm. Love a good pie!

croquettes are great for any leftovers!

Make very thick bechamel, stir in leftover meat, veg, or fish.
Leave in fridge to cool and set.
Once cold, make ballsand cover in egg and breadcrumbs. Fry in olive oil.

Spanish mothers love this leftover meal!

I would do a curry, or a chicken and leek pie.

My trick is to always do too many roast pots, then slice and fry them and have them with the cold meat, pickle and salad. Easy and yum!!!

I put a pile of wraps on the table (the mexican ones, the name escapes me) salad, sour cream then reheat the chicken with some chopped tomatoes and salsa sauce. Put everything on the table and everyone can help themselves. The DC love it, nice and messy

Risotto definitely. With white wine, peas and lots and lots of parmesan....yummmmmmmmmmm!

Coronation chicken with jacket spud and salad. Any left goes in sarnies.

Chicken, leek and potato soup.

Special fried rice. - Lots of stir fried veg, pre-cooked rice, seasoning, chicken.

Risotto. - Will need the stock from the carcus, veg, chicken, arborio rice .

Curry.

Whoo Hoo! Just found the Nigel Slater risotto recipe in one of my recipe books.

Haven't even roasted the chick yet and i'm looking forward to left overs
