Recipe to use up Cherry Plums

I have 3 cherry plum trees in my garden, all laden witgh ripe cherry plums and it seems such a shame to let them just fall to the ground and rot. Does anyone have recipes I could use other than crumble? I was thinking of making jam but don't have jars to hand - can you make freezer jam with cherry plums? I've made this successfully with strawberries.

Cook the plums with a little water and sugar and then freeze. Can be used then as they are or as base for baked sponge puds.

Plum Brandy. - This is nectar and really very good. And at the end you get plum brandy and brandy plums.

Plum Jam - then use it in everything including bar b que sauces.

Not good to freeze, but yummy.

Plums halved and stoned, single layer in a largish dish, sprinkle over a bit of brown sugar, cloves and star anise in and around, pour over red wine, bake for a bit, baste in the wine as you go.

Fab.

This is rather yummy:

Plum Cake (Nigel Slater)

? 150g butter
? 150g caster sugar
? 16 plums ? de-stoned and cut into quarters
? 3 large eggs ? beaten lightly
? 75g plain flour
? 1 1/2 teaspoons baking powder
? 100g ground almonds
? 50g shelled walnuts ? chopped

Set the oven to 180 C and grease and line and 20cm square tin.

Beat together the butter and sugar.
Add the eggs gradually.
Sift together the flour and baking powder and fold them in.
Fold in the ground almonds and walnuts.

Scrape mixture into tin and put the plums on top ? they will sink into the cake as it bakes.

Bake for 40-45 mins and test with a skewer. Remove cake from the oven and leave in tin for 15 mins before turning out.

Thanks everyone for your recipes,
I decided to turn them into jam as they were hard to de-stone without turning to mush and quite small. Jam is nice, although a bit tart. Would turn into a lovely jam sponge pudding though.
