Veggie meal or not? Butterbeans - a yummy idea of what to do?

Hopeful of becoming a healthier eater I impulse purchased butter beans, soaked them overnight and am now wondering what on earth to do next that the kids, dh and i will love. ANy ideas - has anyone done this before

I like butterbeans in a sausage casserole but that's not very veggie, is it! Could use veggie sausages though...
Nice with rosemary and lots of veggies in a tomato sauce - serve with baguette.
I love butterbeans.

to yogabird!

how about a salad - of beans, feta cubes, grilled red pepper, tomato & red onion on bed of mixed leaves. Honey, lemon, a little garlic and olive oil for the dressing.

DH (a salad hater) will eat this crammed into pitta breads.

They're nice in a veggie sausage casserole.

My favourite though is to fry onion and garlic in olive oil until soft but not brown - add some dried mint, black pepper and a bit of paprika and chilli. Fry for a min. Add a tub of passata and cook a bit. Add the butterbeans and cook a bit more, just to warm them through and take on the flavours. Add a big spoonful of Greek yoghurt. Serve with Greek salad, tsatziki, pitta.

If you've not got passata you can use a tin of toms but blend them first as lumps are blah.

mash them with some herbs, salt and pepper and serve as a side dish, they are actually quite tasty.

I quite often have them cold (straight out of the tin in this house) with some pesto. This makes a nice base for a salad as well.

mix them with breadcrumbs to make chocolate biscuits

sunny and lovely here today but am fancying sausages, despite the possibility that summer has returned. Will file your feta recipe and go off to farm shop for bangers
