DS1 has said he wants to be a vegetarian.. ideas please

ds1 has decided he want to be a veggie.. and fair play to him.. not a problem for 2/3 night a week anyway as I tend to do an all veg meal anyway.

but I need ideas for when we are having meat/ fish days, that are pretty easy as I don't really want to cook 2 different meals each night. But I do want to make sure he's getting everything he needs.

Ie can I leave the meat off his plate.. and what shall i subsitute that with?

Also he hates with a passion any type of bean, pulse and lentil. which doesn't help much.

and if any of you have lunch ideas other than cheese sarnies that would be great .. thank you

I went veggie when I was 7 and have huge admiration for my mum for respecting my opinion on this at that age (though now I realise it must have been a bit of a pain!
Agree with Rasputin - there are lots of good quorn things out there - the fillets can be dressed up with sauce etc like you would with chicken. Pieces are good in stir fry (we like the beef ones more than chicken, but personal preference, obviously). The pre-prepared quorn things (kievs, peppered 'steaks' etc) are a bit more pricey, so you might want to keep those for special occasions. Will he eat baked beans? Beans and veggie sausages are good to bump up the protein.
And lunches - pasta salads with quorn ham or cheese, marmite and cucumber sarnies or rolls, quorn even do mini cocktail sausages now! Egg sarnies, hard boiled egg, peanut butter with celery dippers, dairylea dunkers.
Might also be the time to have a chat with him about food groups! If this is a long-term change, for health and in the interests of getting enough protein, he'll need to give those pulses another chance!
