Mexican dinner - starter ideas, or just throw some doritos and tequila at them?

Have to dash out but will be back later so apologies if I don't respond for a bit...

Friends of ours are coming round to dinner - one is a veggie, one an unrepentant carnivore. I thought to make life easier for me/them, I might do fajitas and salad for the main course with home made refried beans, veggies, cheese etc (possibly some quorn strips, must check if she eats them!) and then some chicken/steak strips for the meat eaters as well, then everyone can help themselves.

Then I was looking through Nigella Express (see other thread) and happened upon her recipe for Margarita ice cream, and thought hmm... Mexican theme to the meal?

So with that in mind, would you bother with a starter or just hand round the corn chips, dips and drink?

If you did do a (vegetarian-friendly) starter, what would it be?

Nigella's quesadillas are yummy!

Plate of nachos with melted cheese/ sour cream/ salsa/ guac etc?

Also, fajitas are lovely with big chunky slices of big mushrooms (though two of my veggie friends awkwardly don't like mushrooms!).

If you could get some of those stuffed jalepenos (stuffed with cream cheese then breadcrumbed) they are really tasty and veggie friendly.

I would just do a big platter of nachos with cheese and jalepenos and all the usual dips... mmm mexican! I am very jealous and dribbling!

I'd completely forgotten about those jalapeno/sour cream thingies, some of them and a plate of cheesy nachos with guac etc. should do the trick.

These are the same friends I ended up having an Indiana Jones-style drinking race with (using DH's entire choccy gin stash) the last time they came over, so I shall line up the tequila slammers for later in the evening...

The pre-packaged supermarket tortillas are horrible. Not sure where you get decent ones mind.
