Eggs!

My fridge is over-run with them!
We had scrambled last night and are having omelet tonight. Eggy bread for breakfast
Thinking of quiche tomorrow, any other ideas??

hard boiled in a salad
hollandaise/ mayonnaise
frittata

75g dark choc
75g milk choc (I use tesco value for both & it turns out fine!)
3 eggs
1 tbs fresh orange juice.

Melt the choc in a dish over boiling water. Leave to cool to room temp.
Separate eggs & add the egg yolks & orange juice to melted choc.
Whisk the egg whites till stiff, then fold into choc mix in 3 goes.
Cover & chill in fridge for a couple of hours.

I used the recipe when I had a glut of eggs... it's very simple & very yummy. Have made it several times since!

you could make a load of yorkshire puddings and freeze them.
