I'm gonna be doing sausages, potatoes, peppers, tomatoes all in a tray, what else do I need?

I will be coating the potatoes in vegetable oil (have no olive oil) , adding sausages, then roasting the peppers and tomatoes all in the same tray. What else can I add, do I need a tin of toms, or garlic, It seems a bit, bland??

Or is this just wierd?

I did something like this on Monday and it was lovely without the tinned tomatoes.

Just add the tomatoes 10 mins from the end, along with a slosh of Balsamic vinegar.

I served it with a pile of green beans

Whole, unpeeled garlic cloves? When it's done, squeeze the garlic out of the skins, mush it up and mix it into the roasted veg. Gives a mild, sweet garlicky flavour.

Sprigs of rosemary?

Other veg - courgette, giant mushrooms, butternut squash, new potatoes (delicious roasted)
