Lentil casserole ?

Anyone got a nice recipe.. one which tastes wholesome and healthy, rather than bland?

Ok, done this loads but here goes...
Fry up garlic,ginger and onions (maybe chillies too). Add a few tablespoons of curry paste (not vile cook in sauces,must be paste or powder at least.
Fry a bit more.
Add maybe 500g of red lentils. Stir and allow to fry for maybe 5 mins.
Add a tin of tomatoes, a tin of coconut milk and allow to simmer,stirring occasionally and adding water if it gets to thick.
Season and serve with rice and maybe peppers,tomatoes,onions and cucumbers,cut up finely with coriander and lemon or lime juice.

Found this Sounds yummy but I've never made it. It does have meat in it though.

i fry an onion and garlic for a few minutes, add red/orange peppers, mushrooms and courgette and fry until softened. then add a tin of tomatoes, the lentils (normally green) and cover with stock. boil rapidly for ten minutes, add a teaspoon each of dried herbs and basil and season. cook for about 20 minutes. serve with pasta and some cheese grated over the top.

Hi Unicorn, try this if you get a mo. It's delish and soooo easy!

Wholesome Lentil Soup

1 med onion (chop roughly)
1 lg carrot (")

Lentils (rinsed and you can have however many you like. I put in about the equivalent of a breakfast bowl)

Chuck them all into a pan. Add WHITE pepper (that's the secret ingredient), maybe a touch of onion salt (or wait till after to taste)

Cover with boiling water. Add 1-2 organic stock cubes (get mine from Holland and Barratt).

Bring to boil and simmer for at least 25 mins then serve. For best results leave in the fridge overnight to 'ripen' and re-heat the next day. Simple and absolutely gorgeous.

You can add any other traditional soup vegetable such as leek, potato or a little parsnip (but only a little of that. Enjoy!

I cook red lentils till soft. Then fry a chopped clove or two of garlic, some chili and ginger in a couple of tablespoons of oil and a big knob of butter till they are all golden and smell gorgeous. Stir this buttery mixture into the lentils, dump a bag of spinach on top and cook with the lid on until the spinach has wilted (a matter of minutes). Season generously.

it is yum on its own with rice or with a meat curry.

another tip is that once you have had the baby you will actively avoid any pregnancy literature as much as possible
