thanks - any others - feel like we have the same kind of stuff every night - fancy something a bit different - but with baby and toddler time is always short.

For you or kids?

For you - Feta cheese/Greek salad - chopped feta, black olives, tomato, cucumber, spring onion, loads of herbs (esp mint) and olive oil/lemon juice dressing plus loads of french bread. Once a week in the summer for us!

For kids - cook too many veg the night before and add to omelette to make slightly dull but very easy spanish omelette. Extra cheese and baked beans make it a bit more interesting.

cheese 'pie' - fry onions, leeks and peppers, add to loads of mashed potatoe mix in cheese, put in oven proof dish. then cover in cheese and put in oven so cheese melts and forms a crust on top. havent had that for ages, v v tasty

Second the tortillas, we do ours with roasted veg.
Also couscous with veg and cheese, all mixed up then heated in the oven to melt it.
As above but with rice.
Spanish omelette.
Pasta and pesto.
Pasta bake.
Veg bolognese/chilli/shepherds pie.

Thats our weekly menu!!!
