Seeing as this time last year I was on here trying to salvage my soup! Got this nice recipe in a local paper this year and it was yum!1 onion chopped2 garlic cloves crushed1 tbsp curry powder1lb pumpkin flesh, chopped1 sweet potato chopped1 tin coconut milk1 pt chicken stockFry onion until soft, add garlic, fry for 1 minute, blend in curry powder. Add pumpkin flesh and sweet potato, stir till well coated. Add coconut milk and stock, simmer for 20 minutes, then blend.And yes, expat, it probably would be better with butternut squash than pumpkin but I ended up with 5 extra pumpkins this year and ds4 can only eat so much pureed pumpkin!
