Cod

4 chicken breasts
punnet cherry tomatoes
olive oil
seasoning
creme fraiche

chicken, tomatoes, oil and seasoning in roasting tray. Bake for 40mins.

remove from tray

add creme fraiche and heat through on the hob.

Serve with rice and salad

cod - pork fillet with blackcurrant and apple? very easy and totally gorgeous

do in advance: slice an apple or 2, fry in butter for 5 minutes, sprinkle with cinnamon. bring punnet of blackcurrants to the boil with tiny bit of water and sugar to taste. trim the fillet

45 mins before eating: fry the fillet in a baking tray till nicely browned, put in hottish oven to roast - needs about 30 mins depending on size.

take port out of oven, leave to rest, put tin on hob, stir apple and blackcurrant into the tin, mix with all the pork juices.

I like it with green beans and roast pots or new pots

something from here just found this today and love it - it has gorgeous photos and loads of recipes. and the blog bit is suprisingly readable.

my dh does mozarella wrapped in parma as a starter. serves it on rocket with his home made plum chutney - outrageously yum.

try baking a fig with the proscuitto wrapped around it and a chunk of mozzarella squished into the middle of the cut fig. Lovely just on a bed of rocket as a starter with a balsamic dressing.
