Chicken breast ideas please...

Please help me with some ideas of what to do with chicken breasts. There are loads of things I used to like them with but have gone off loads of foods that I used to like for some reason.

This is lovely but needs skin-on breasts really (it's a Jamie one from Sainsburys ages ago).

In flattish dish (lasagne type is perfect) lay chicken breasts on the bottom, fill in the gaps with cherry toms (cram them in!) & then put squidged-up bits of streaky bacon on top of the toms.

Sprinkle some crushed garlic & rosemary sprigs over the top, pour some olive oil over the lot, & bake at about 200 for around an hour, or cooler & longer if you have time - the chicken is always really juicy, with gorgeous crunchy skin, & the olive oil/garlic/chicken juice/tomatoes turn into a beautiful sauce (not a lot of it mind you, but you can always add more olive oil before the end)

Do you like chicken and bacon melts? Just chicken breast with bacon and melted cheese on top. I usually serve it with tomato pasta and drizzle some extra pasta sauce on top of the chicken.

Yoghurt as a marinade base - sounds gross, but tenderises the chicken beautifully and doesn't end up tasting yoghurty at all. just use a few tablespoons of plain natural yoghurt as a base and add whatever seasoning / spices you like.

I do a slightly spicy version by add a few teaspoons of curry powder to the yoghurt, marinating the chicken breasts in it for at least an hour (preferably 3-4 hours) and then grilling under a hot grill. I also do a version where I substitute the curry powder for a big glug of sweet chilli sauce and a little bit of lime zest. Both work really well on the BBQ, too.

Very quick and easy one - put chicken breasts in an ovenproof dish, pour over a jar of good quality tomato-based pasta sauce (the Jamie Oliver ones work well for this, or you could make your own of course. Add black olives to the sauce if you like them...), then top each breast with a thick-ish slice of mozzarella cheese and bake in a hot oven. Garnish with fresh basil leaves. I serve this with lemony potato wedges (red-skinned potatoes, whole garlic cloves, lemon wedges, bung in oven for 30-40 mins) & steamed young greens - spinach, peas, tenderstem broccolli. really nice.

Have you tried making jerk chicken? Or Thai green/red chicken curry? Or an Indian-style chicken curry? Or BBQ chicken?

Sticky Lime Chicken

You Need:
4 chicken breats
1 tablespoon Honey
1 tablespoon olive Oil
1 clove of garlic - diced/grated
Juice and zest of 1 lime
Black pepper
Fresh thyme - 1tablespoon - I just used dried stuff - 1/2 tablespoon

Put breasts into ovenproof dish.
Mix all ingredients in bowl and spoon over chicken. Chuck in an oven preheated to 190degrees. Cook for 35-40mins. Or until chicken is done. Baste the chicken with the juices every 10mins or so.

Enjoy

If you dont like lime or dont have it, i sumtimes use orange
