Lots of beetroot... want to make some sort of side-dish for a curry

I would make a spicey yoghurt with cumin, coriander and tumeric in it. Salt too. Grate the beetroot along with some carrot and add toasted sesame seeds and mix in the sauce.

Otherwise you could cube it, fry it up with onions and Pataks korma paste. Cook lentils and add the whole lot together.

For the final touch fry some finely chopped garlic in lots of butter until it just starts to caramelise, and pour it in at the last minute.

That last, garlic bit is tarka. That's how dahl becomes tarka dahl.
