Just cook it and serve it with a dash of double cream or some butter, and some grated nutmeg.

i add some to pesto and puree it up to add veg to pasta (non veg eating boy here!). Or add (pureeed again) to a white sauce (making it green) for fish pie

tasty with some garlic - cook it in water & then add some fried garlic. Also nice added cooked to scambled egg.

I chuck it in lots of things, curry, bolognase, pasta, risotto. It's great for adding vitamins to a dish surreptitiously for fussy buggers, like DH!

defrost and drain and mix with equal weight of cream cheese, ebout 1 1/2c grated cheese, some nutmeg and and egg. Mix well. Line base of dish with yummiest tomato sauce you know, add instant lasagne sheets, top with spinach mix and do layers all over again. End with tomato sauce and grated cheese. Bake app 30 mins on 180...yum yum yum yummy yum

Make a spinach lasagne. Either tomato type sauce with the spinach, tin of tomatoes, maybe a courgete, garlic, oregano etc., or spinach with ricotta or goats cheese, pine nuts etc.
Layer with cheese sauce and green lasagne sheets, grate parmesan on top, yum yum.

Or spanokopita - cook with some chopped onion, garlic, ricotta, crumbled feta, oregano, beaten egg and flour to bind, in filo pastry parcels or filo pastry pie.

I chuck a block or three in a pan with some butter, then when it's defrosted, make an omelette over the top.
Also chuck into pasta sauce and curries.

pasta sauce recipe:
chop an onion, pan fry with some garlic until soft
add tin of tomatoes, a few blocks of defrosted frozen spinach, some black olives and capers (rinsed well to get rid of brine)
toast some pine nuts (fry in pan without oil until browned) and mix in with sauce
serve with pasta and sprinkle feta on top

i know the feta isn't very italian but the whole lot makes a yummy pasta sauce!
