I am making 2 meringues.Can I freeze one when its made and save it for another day?

no need to freeze, plain meringue (before addign cream etc) will keep for a week or more in an airtight tin/tupperware

It would never last that long in our house, DP would have eaten it after a day

oh yes, so long as properly airtight
there's nothign in them to go off - might get a bit chewy though.

Mrs B is (as always in matters cookery) quite right.
But, interesting meringue-fact - even when frozen, it doesn't taste frozen. No idea why that is, but meringue ice cream cakes are spectacular smile

becasue they have such a low water content there's nothing in them to freeze

dont they go soggy if you keep them that long?

m,akes you think, that do they put in the shop bought ones so that they keep for so long
