Onion gravy!

Does anyone have a good recipe? One that goes beautifully with sausage and mash? TIA!

Cut an onion into rings and gently fry (in sausage fat!)
Stir in 1/2 tablespoons of flour
Brown while stirring
Add stock (water from Potatoes) slowly until the correct consistancey (I like thick DH likes runny)
Use gravey browning if not dark enough (a few drops)
Cook for 2/5 mins

Slight variation:
Cut onion into rings and fry gently (in oil)for about 10 minutes.
Add 2 tsp plain flour & cook though
Add 1 pint stock, 2 tsp worcester sauce or soy saice & 2 tsp mustard.

Simmer gently for 15 - 20 minutes.

Did a really nice, slighty different one out of Delia the other day.

1 onion, very finely chopped. Cook very low in 40g butter for 10mins.
Add 20g plain flour.
Gradually add 275ml milk and 150ml veg stock (as if you were making a white sauce)
Cook very low heat for 6mins.
Season, then stir in a lump of butter just before stirring.
