Food/recipes

I have feta and courgettes and some root veg.. all need using.. any reciped ideas?

In my efforts to eat more healthily and waste less I'm looking at better using what I have rather than just using veg that needs eating as snacks/sides..

I have 3 courgettes a pack of feta, carrots, parsnips, onion, potato, leek plus bog standard store cupboard items..

any ideas for meal recipes I can cook (and poss freeze)

I would chop it all into chunks and just roast them in the oven for about 30 mins with some cherry toms or normal cubed if you have, after 30 mins crumble feta ontop and bang in the oven for 10 mins.

mmm, will do that for lunch tmw then..

any other ideas anybody? won't be able to use it all for me and dd's lunch

Have you got eggs? Why not make a tortilla, with the potatoes, onion, leek and courgettes? You could put the feta in that too.

yep got eggs? do you mean omlette or tortilla, bit confused (sorry)

Well, not sure when an omelette ends and a tortilla begins!

OK:

slice potatoes thinly - you may want to par boil them so that they are tender
slice any other veg
gently fry them all in an omelette or smallish frying pan (about 6-8 inches across)
season with salt and pepper, herbs if you like/have them

when they are softened, pour 4-6 beaten eggs (number really depends on how many people/how big your pan is) and cook slowly over a low heat

To finish, put the pan under the grill (this makes sure that the egg is cooked all the way through). You could put the feta on the top at this stage, so it melts/cooks.

When it is cooked, turn out on to a plate and slice. Lovely served warm or cold.
