Is the egg in this recipe classified as raw or cooked please ...

Okay, maybe a dumb question but if I'm making a souffle (cold) and have to put the egg yolks, caster sugar etc in a bowl above pan of barely simmering water and beat until mousse-like, is the egg raw or cooked?

Don't want to use raw egg as am b'feeding but really want to do this souffle.

raw I assume, otherwise you wouldn't be able to make it mousse like I'd have thought.

firstly if the souffle rises then its cooked I would guess

secondly there's no harm in raw egg when breastfeeding

And won't you be cooking it afterwards? I wouldn't have thought there was a problem even if you're bfeeding.

It would be classed as "part-cooked" I think. No problems with eating raw egg if you're breast-feeding though (I mean, you could get salmonella but I don't think you can pass that on in breast milk - though you'd be too busy puking to feed). So long as your eggs are lion marked you'll be fine.

Thanks .... the souffle doesn't get cooked, it's one of the chilled ones where you then fold in egg white and cream ... oops, forgot the egg white so guess it's raw. Also worried about elderly parents and salmonella. Okay, maybe I'm fussing too much or maybe I should go and get the recipe books out again and re-think.

I wouldn't give ageing parents semi-cooked egg, tbh. Not worth the risk - you'd feel terrible if they were ill.

Make a roux with 2 oz of butter and 2oz of SR flour
add 1/4 pt milk 1 oz sugar and 6 egg yolks
whisk 6 egg whites and add 2 oz sugar slowly
fold into milk mixture

pour into buttered sugared ramekins over 6oz of sweetened fruit

bake (gas 6) for 10 minutes
makes 6

You can normally get frozen blackberries in asda/tesco and they would poach well

or apple

or apricot

or some honey
