How to cook beef

Can anyone share their tips on cooking a beef joint? Mine always turns out ok but never great. I have no idea why I struggle with it so much. I’ve got a joint to do today and it’s 2.220kg. Needs to be cooked this afternoon so will have to be oven not slow cooker.

Please could someone tell me what I’m doing wrong? Confused

Do you let it rest for 15 - 20 mins before carving? Resting definitely helps

Yes it always sit for 20 mins before and after

Delia's way never fails me. 20mins at 245 degrees then down to 190 with 12 mins per lb for medium rare. Then rest.

I had an amazing beef joint last weekend. I wasn't expecting much, but it was delicious hot and then sliced for sandwiches the next day. I think I was partly lucky that it had been a good piece of meat.
