It's that time of year when all I want to do is eat soups, stews or curries. Today I have made this www.bonappetit.com/recipe/simple-ribollita. It's really lovely. I make loads of different soups but am always looking for new ideas. What is your favourite soup to make? All recipes very much appreciated thanks Smile.

Anja Dunk's Heartbreak Potato Soup. Best soup ever! We blend it for a smoother soup, she doesn't. But otherwise I follow it to the letter. www.google.com/amp/s/amp.theguardian.com/food/2020/jan/27/ofm-20-best-recipes-anja-dunk-heartbreak-potato-soup

Oh these all sound fab! I'm going to try the heartbreak soup, although maybe minus the prunes. Love the sound of spicy tomato and baked bean too Smile.

Oh no honestly include the prunes! I know it sounds so weird, and I was very skeptical but especially when you blend it they add great flavour but you wouldn't know they were prunes!

Oh I love the sound of the sound of the Roberto soup! The others sound delicious too, I've never tried a cauliflower cheese soup and I don't know why because I love it!

Thursday is market day where I live, so I go out most weeks and buy tomatoes and red peppers and roast them with garlic and onions, then blend and boil for 10 mins (with some red wine and seasoning - it's my family's favourite!

Nacho soup is a complete meal in a soup - also good without the chicken:

I got Nigellas split pea soup from MN - it is great:

Who's got the worlds best veggie soup recipe? I usually throw everything in a pot and hope for the best but am willing to be more guided.

I think this may be the winter of soup. Perfect for WFH - make a big pot and eat it all week for lunch.

my own lemon & lentil soup:

Saute chopped onions & garlic
add brown or green lentils & chicken stock
cook until lentils are done.

add zest of a couple of lemons and lots of chopped kale.
cook a few more minutes.

season, lots of black pepper.

just before serving add juice of 2 lemons, and good slug of olive oil.

serve as is or top with any/all of:
grated cheese
spring onions
any green herbs
natural yoghurt.

Delicious soup made from apples and squash grown in the garden. Didn't make the croutons but sure they'd be lovely with it.

Love soup season. Will definitely be trying yours, OP, once I have some celery.

@theclitterati Loving the sound of all of these, I do one similar to the nacho soup with mince, rice and kidney beans. I could live on the stuff. Can't help with the vegetable soup mine is either everything I have in the fridge or a lazy ready chopped up soup pack from Morrisons cooked up with stock with an occasional swirl of cream added 😂. I like to mash some of it and add it back to the pot as I like it thick but still a bit chunky. Will definitely be trying your lentil soup.

I'm also a fan of Chinese chicken noodle or chicken and sweetcorn soup, or spicy noodle broths, scotch broth, lentil and bacon, carrot and coriander, leek and potatoe. I recently did one with sweetcorn,
Yellow pepper and coconut milk which was gorgeous but my own creation.

@msfoxy17 thats another for my list, can't wait to try all these Smile.

@theclitterati oh sounds good. I've got an experimental one on at the moment. Hoping it turns out ok. Onion, 3 tomatoes, half a head of broccoli, half a savoy cabbage, 3 carrots, a tin of butter beans and a jar of salsa (I've run out of tinned tomatoes so imorovised 😂). Seasoned with cumin, lemon pepper, celery salt and a bayleaf unfortunately I've run out of homemade stock so making do with cubes I'm sure it will be fine once its all blended the weather's awful today so I made do with what I had in 😂.
