Please help my mayonnaise

I'm doing a diet that requires very strict no dairy, grains, sugar, soy etc so I've been making my own mayonnaise. Literally egg, oil, whisk, add salt, add garlic granules, add lemon. The first few batches were amazing.

But now it won't work, and I'm starting to get all foot stampy about it. Exactly the same method, but not coming together to an emulsion and thickening.

Why?? Why, dammit?!

I've tried googling; i've tried hand mixer and immersion blender, I've added a tsp of boiling water; I've tried adding vinegar, I've used room temperature eggs and oil, I've used different oils and eggs and no, nothing. This is probably my last 5/6 batches now and I'm getting really cross.

Can anyone help me??! Anyone??! Is there sone amazing trick I'm missing??

Are you adding the oil too quickly, rather than dribbling it in?

Put egg in jar, add oil, put immersion blender in right to the bottom of jar, blend WITHOUT moving blender stick AT ALL.

It will thicken and then you can move blender stick up gently, season as usual with salt and lemon and now you can blend normally.
It's important not to jiggle the blender stick around at the beginning, immerse right to the bottom of the jar and switch on, it will quickly thicken the egg and oil mixture and after that you can move it no problem, mayonnaise will hold it's texture.
It's best if ingredients are all at room temperature

I do it by hand, bit of a faff but worth it. The only time I tried with a blender it was rank.

@Itwasaquarterpast11 yes trying to, but maybe too quickly, although my recipe says do a few tbsp oil plus egg first and even that won't emulsify

@thenumberseven that could be it, I have been using my electric whisk predominantly and I have been guilty of jiggling the blender when I've used it

@AnneLovesGilbert I might try that recipe, mine uses the whole egg, but only 1 to 300 ml of oil, so completely different ratios.

If you use whisk put eggs and at first oil almost drop by drop , then as it emulsifies add oil in a very thin stream, with the immersion blender the secret is not to move the blender
