Please recommend some family recipes

Hi everyone. Not turning vegetarian but trying to cut out things like sausages and have more vegetarian meals!

Has anyone got any recipe suggestions. Perhaps a vegetable lasagne recipe? Pasta recipes? Any other recipes that you recommend for a family. Not too complex....

My daughter hates cheese. But I can sneak it on lasagne.
My partner hates garlic.
We don't like spicy food either.

Any inspiration please? Kids absolutely love veg and peppers.

Curtis Stones’ mushroom risotto, any quiche with what is in the fridge.
Veggie pad Thai.
Husband is a huge meat eater and does not like risotto, but always eats the mushroom risotto

Smoked mackerel and potato bake - like dauphinoise but with mackerel. Could also add some green veg in there eg peas or spinach

Waldorf salad - good with or without chicken
Chickpea salad - either with roasted veg or with crunchy veg like chopped peppers, cucumber, tomato. Or swap chickpeas for cous cous

Creamy pasta with mushrooms and parsley
Creamy pasta with courgettes (better with a little bacon or cheese). Pine nuts are good

YY risotto, prawn and peas is a favourite with the kids and doesn’t need cheese

Noodle soup - stock, noodles, veg, soy sauce, ginger and toasted sesame oil. I add garlic and a little chilli but you could leave out

Stir fry - same as above but minus the stock! Or with rice instead of noodles

Frittata
Quiche
Puff pastry tart with veg
(but all of these are better with some cheese involved tbh)

Fajitas, can be made not very spicy (I use paprika for the DC, no cayenne or chilli)

We love Veggie enchiladas. Just a chilli mixture but instead of meat we put in loads of onions, peppers, mushrooms, chick peas, kidney beans, maybe a tin of baked beans too then the usual chopped tomatoes etc. We'd also put chilli and garlic in but you could omit that.
Fill the wraps in tubes and put in a big baking dish & pour remaining mixture across top and then top with grated cheese. Bake until cheese is cooked. Yum!
We also eat cauldron falafels in wraps with salad and hummus for a meat free meal. I love them.

I'm the same as you OP, I definitely want more meat free meals. This is a great thread.

Falafel in it as with salad. I make my own with a mix of BNS and chickpeas and bake them rather than fry.
Do you make stuffed peppers? I enjoy them stuffed with cous cous or quinoa mixed with red onions, sweetcorn, mushrooms, lots of herbs, then top with cheese and breadcrumb mix (minus the cheese for dd)

Has your cheese disliking dd tried haloumi? It’s not cheesy in the way other cheeses are! Only ask as haloumi and veg skewers are perfect on the bbq!
