What dishes do you cook with fresh meat?

We are trying to use more fresh meat and less frozen trash, but getting bored of the same dishes.

What dishes to you cook from scratch (and I don't like lamb)?

Beef
bolognese
chilli
chimichengas
cottage pie
steak & mushroom pie
hotpot
stew & dumplings
roast

chicken
kebabs (butcher prepped, wouldn't mind 'marinade' ideas)
griddled (with or without Schwartz seasoning, homemade seasonings welcome)
curry
roast
stir fry
casserole

pork
gammon steak
roast
proper butchers sausages
provencale
griddled (with or without Schwartz seasoning, homemade seasonings welcome)


P.S. please be prepared to provide recipes if someting sounds tastey

Pork medallions with mushroom sauce on tagliatelle.

Pork chops grilled with stuffing (make a sxlit in the middle on wedge stuffing inside).

Chicken breasts wrapped in parma ham and baked

Poached chicken with a chive and lemon sauce.

Beef and guiness stew.

Chicken wrapped in ham - but i put a slice of brie or cheddar inside too. Soo easy because I am a sad crap cook - but still trying

Pork with Creamy Mushroom Sauce.
Serves 4.
Ready in 30 minutes.
Price per serving £1.75
4 x Asda Good for you! half pork fillets, total weight about 1 kg.
2tbsp sunflower oil.
1 small onion, chopped.
250g Asda chestnut mushrooms, sliced.
1 tbsp frsh thyme leaves, stripped from stalks.
200ml pot Asda creme fraiche
can you tell it is from the asda magazine?

  1. Cut the pork into 1cm slices. Heat half the oil and cook the onions until soft and golden. Add the mushrooms and thyme and cook, stirring occasionally, over a medium heat for 5 minutes.
  2. Meanwhile, heat the rest of the oil in a non-stick frying pan and cook the pork in batches until golden on each side and cooked through. Add to the mushrooms.
  3. Add the creme fraiche and 100ml water. Season and simmer, uncovered, for 5 minutes. Serve with mash and green beans.

fresh roast chicken is really easy

  • buy a good-sized one as cold chicken can be used for sandwiches and things the next day.
  • check for giblets
    -cut a lemon in half and put the two halves in carcass
  • rub the whole birdwith olive oil and lots of salt(makes the skin crispy)
    -put in roasting pan at about 180 DegC for about an hour and three-quarters
    Baste every so often
    -chicken is cooked when you slice into it and the escaping juice runs clear(no blood)
    -serve with veggies or salad
    -FYI - this is a very basic recipe, but once you get the hang of it, you can jazz it up all you want.

DO you think you could griddle the stuffed pork chops? I assume you are stuffing with sage & onion?

Also - the waitrose website here
has got loads of lovely recipes that aren't hard. And if the recipe needs something your local supermarket doesn't have, then just substitute with what you can find.

Paprika Chicken - actually called Golden Baked Chicken.

60g/2oz flour
1 tbsp/15ml paprika
4 chicken breasts
2tbsp/30ml olive oil

Pre-heat the oven to 180C/350F/gas mark 4. Place the flour and paprika in a plastic bag. Add the chicken breasts and shake well until they are well coated. Put the olive oil in a baking dish. Add the chicken breasts and turn them carefully in the oil. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for a further 10 minutes until golden brown, then serve.

Ones not mentioned so far that I make are:

Beef
Lasagne
Moussaka (supposed to be lamb, I think, but I always use beef mince)
Beef stir-fry (using those ultra-thin steaks, cut up)

Pork
Pork chops in orange sauce
Sausage casserole
Pork and apricot casserole

Chicken
Portuguese chicken (with chorizo, tomatoes, etc)
Moroccan chicken
Thai curry

You said you don't like lamb, but what about duck and venison and the like, for a change?

I don't think this is over sweet.

Chicken fillets with mango chutney and apricot.
Makes 2 adult portions.
2 chicken breasts, off the bone and skinned.
Sauce
1 tbsp apricot jam.
1 tbsp mango chutney
3 tbsp mayonnaise
1 teaspoon Worcester sauce
1tbsp lemon juice

Mix all the ingredients together for the sauce.
Put the chicken into a small ovenproof dish, pour over the sauce and cover the dish with foil. Bake in a preheated oven to 180C, 350F, gas 4 for 30 minutes.

Also - once you get handy at making a good mince sauce - it can be served with a multitude of things as well as frozen etc and is very handy!

We do more fish than meat, but a lovely chicken marinade is apricot jam and thinned with a bit of hot water -
or marinate chicken in soy sauce, honey, mustard and olive oil.

Beef Stroganoff

  • 225g Sirloin, cut into strips
  • 3tbsp flour mixed with 1tsp paprika, salt and pepper
  • 75g butter
  • 1tbs olive oil
  • 175g sliced onion
  • 175g sliced mushrooms
  • 1tbsp Dijon mustard
  • 1 pot soured cream (or can use Greek yoghurt if you want to keep cals slightly lower)

    Need 2 pans for this. Roll beef in seasoned flour and fry off in butter and a drop of oil in one pan. Fry off onions and mushrooms in other pan with olive oil. Stir mustard into cooked mushrooms and onions. Transfer beef and juices into vegetable pan. Stir in soured cream and warm through. Serve with rice or noodles.

chicken kebabs

one chicken breast per person - skin, slice in half lengthways into two or three slices (depending on the size of the breast)

Put slices into a plastic box and add:

chopped garlic (about 1 big clove for 2 people - more if you like it!)
chopped ginger (about 1 cm piece for 2 people - more if you like it!)
good slosh of soy sauce
good slosh of sesame oil
juice of 1/2 - 1 lemon
dried oregano
chilli powder (to taste - leave out if you like)
chinese five spice powder (just a bit because it's quite strong)

leave to marinate for as long as you want - but for at least 30 minutes - then thread the slices onto skewers and either grill or griddle until cooked.

serve with a wedge of lemon
