Use up ricotta

Bought a tub of ricotta for a recipe, but instead of beautiful creamy spreadable ricotta, it turned out to be dry, crumbly and frankly flavourless stuff. I still have quite a lot left, any (vegetarian) suggestions to use it up before it goes off?

Spanakopita? I would usually make this with feta, so might work. I would add loads of salt and pepper. Or lasagne with lots of nutmeg.

Do you ever make yoghurt cake?
I make it so often I can’t even remember the quantities. It’s one egg, white sugar, plain yoghurt, vegetable oil, SR flour, and your bits to make it interesting (grated carrots and ginger, chocolate drops, lemon juice and zest, vanilla, sultanas, berries, whatever). Whisk it up and bake at 180 for 30 mins+. Never fails.
You can replace the yoghurt with ricotta no problem.

This one uses butter but the idea is the same. The ricotta gives bounce and consistency.

Use in a tray bake with gnocchi or rigatoni, tomatoes, peppers, onions and olives.
Use to top pizza.
Eat with tinned or jarred cherries for breakfast.

Pancakes. I have made one with lemon and blueberries which is nice

Eat like yogurt for breakfast, with fruit etc on top
