Any good/interesting carrot recipes?

Made a bit of a blunder with my click and collect order and bought 6 bags of carrots instead of the 6 single carrots I wanted for making soup Blush I've given a bag to my mum and another to my aunt but still have a lot of carrots to get through so any interesting carrot recipes would be great! Thanks in advance!

You can chop them up and freeze and then add to stews, soups, etc straight from freezer.

Another vote for Carrottes Rapées, and also Moroccan carrot 🥕 salad with sultans, spices and yoghurt or mayonnaise is fab.

Potage Crecy is tasty & easy.

A super quick vegetable is carrot 🥕 grated on large grate, into a jug or bowl with a splash of water and a spoon of whole grain mustard stirred through, & microwaved for 2 or 3 minutes. Good with fish or lamb chops.

Roast in the oven in any shape with olive oil and cumin

As soon as they are cooked toss them in a lemon juice, sumac and honey dressing with raisins (or any tart dried berries)

Delicious as a side with kofte, pitta and hummus.

Chop a red onion finely and dice carrots. Add to a pan and sautee in a couple tbsp olive oil. Add chili powder and turmeric plus seasoning to taste. Will cook completely through. Blend until smooth. Add drained tin of cannelini beans and continue to blend. Stir in tinned chick peas and chopped flat leaf parsley. Pour into ovenproof dish, put mashed potato on top sprinkle with grated cheese and bake. One on my family's favourite meals.

Plan on making all of the above, they sound great.
I suggest Fermented Carrots, easiest thing ever and keeps in the fridge for a while, great for your but flora

In Cadiz, southern Spain "Zanahorias Aliñadas"is a popular tapa.
Peel carrots and cook until just done without overcooking, spice into rounds.
Crush some garlic , oregano and cumin, add sherry vinegar (or wine vinegar ) and olive oil, pour over carrots, toss and put in a jar.
These also keep well in fridge and develop flavour over a few days

I love a grated carrot salad.

Grate a couple of carrots, add a few springs of finely chopped fresh mint, salt pepper and cover with a whole grain mustard dressing. Yum!! We often have this as a side to a bbq.
