Help required with a chicken

Having read Jamie Oliver at the weekend I went out yesterday and bought only organic meat (very proud of myself but not happy with large food bill!!). Now have a lovely organic chicken and no inspiration and feel I should do something interesting with it since it cost me double the price of a normal chicken. Whats the best way to cook it? Want DS1 (two and a half) to eat it too.

I would say
the better the ingredients the more simply you can cook

Roast it - very simply
My top tip is to stuff an onion and a potato (peeld)up it's bottom and pop it in the oven
Iy'll be the most moist roast chicken ever

I usually put half a lemon and a quareterd apple in mine, makes v moist too!
