Aubergines!!!

3 of them in my fridge along with some courgettes.
What do I make?
Was contemplating this idea and adding some courgettes to it too.

Sounds lovely.

You can also cut aubergines and courgettes (and red peppers) into small cubes, toss in olive oil, sprinkle a few herbs and roast in the oven for about 20 mins. I then either blend into tomato sauce for the children or serve the freshly roasted cubes with pasta and parmesan.

I did make the recipe earlier, made double the qty almost. Threw in onions & mushrooms as well as the extra courgette. Twas really nice defo going to make it again.

Will do the oven roasting Saturday maybe as we still have 1 aubergine and 6 courgettes, will add potato and onion to that too and any other veg I come across. That's another meal taken care of

No not growing them. Just fancied a vegetable we don't normally buy. First time I've ever cooked aubergine!

Wish my kids would eat them other than pureed and hidden, then we'd have them every week.

It went down well with my 2 DS's, although DS1 doesn't like mushrooms. How old are your children?

Ahh, I see, 2 & 4. Mine are 2.7yrs & 13mths

DS is just starting to try and occasionally enjoy new things so there is hope yet.

I didn't like aubergine until I was a teenager.
