What would you cook? Something spiced or soy or chilli would be nice.

Probably some kind of curry with whatever other veg you have to hand. Roast aubergine. Fry onion, garlic, ginger and chilli. Add cauliflower and any other veg you have. Add spices (salt, pepper, garam masala, chilli powder, turmeric, cumin whatever you have), fry for 1 minute more. Add one tin chopped tomatoes, one tin coconut milk, a squirt of tomato purée. Add roasted aubergine and simmer until sauce thickens. Could also add lentils, chickpeas etc. Serve with rice and/or naan.

I also made a chilli a few days ago using roasted aubergine and butterbeans and kidney beans in place of mince.

Adapt to what ever you have in obviously but this is a delicious sauce.

You could make a pretty rude picture first, OP?

I would do them separately and do cauliflower cheese one night (posh up with breadcrumbs and bacon or chorizo if you have them).

With the aubergines I would do miso aubergines with rice. Had this the other night and it was amazing. Make a paste with miso, soy sauce, lime, ginger etc. Cut aubergines in half and score the flesh in a cross cross pattern and rub the paste all over them. Then roast in oven for about half an hour or until totally cooked. Then add chopped greens if you have them. Then make a dressing sesame oil, lime, chilli, spring onions and tip over. If you don't have all of the miso paste or dressing ingredients I'd just use whatever - sesame oil, rice wine vinegar etc, anything tasty. Lots of soy sauce on top of it all when you're done.

Roast them both, tossed with turmeric, ginger and garlic. Meanwhile, cook onions with curry powder or paste, then make a tomato and red lentil sauce. Fold the roasted veggies in and serve with rice or flatbread,or both in this house!

All of these sound great. The miso one will use up some odds in the cupboard.

To make things go further, I'd do a marinated aubergine and roast the cauliflower separately. Then you can do loads of things with it: wraps, sandwiches, over rice, over salad.....
