Exciting veggie mince recipes

Hi all, I cook a lot of vegetarian food as my husband is a vegetarian. I could happily not use 'meat' and sub with beans etc but he likes his meat 👀. We use a lot of fake chicken but it's increasingly hard to get at the minute (virtually impossible) . I have a bag of quorn mince I'd like to cook something with. Not - lasagne, spaghetti bolognese, pasta sauce or pie of any description. I would like something a little different, maybe Thai or Asian? I also cook a lot of Indian so tried and tested keema? I have access to both soy sauces, rice wine vinegar, rice wine, lazy lemongrass, garlic, ginger, vegetable bouillon, noodles. Anyone have any ideas using my ingredients, or something else a little different? We keep a pretty good store cupboard and have most herbs and spices imaginable 😊. Thanks so much

Loaded fries if you're feeling mucky! 😋 with fried onions/mushrooms, cheese, fake bacon lardons and salad/pickles on the side.

I know you said no pie, but I make an ideal inspired cottage pie that’s lush. Basically make your usual curry base with onion, garlic, ginger and spices. Add a tin of chickpeas, veggie mince, peas, any other veg you fancy, and either a tin of chopped tomatoes or coconut milk depending on whether you prefer a creamy or tomatoey based curry. And a couple of table spoons of mango chutney. Allow to simmer before transferring into an oven proof dish and topping with sweet potato mash. Sprinkle with toasted nigella seeds and bake.

Hmmm loaded fries, interesting. Never thought of that. How would you use the mince though???

Love the soup idea. I've never tried meatball with quorn I've always thought it would fall apart. Has anyone tried this? I'll have to Google I'm not familiar with that soup

Pie sounds very different, I'll treat it to my husband but I imagine he will screw his face up. You never know!

Hmmm he would probably faint at the enchiladas.. And I have a pack of wraps 🤔 it's not the kind of thing I default to so I like. I'll check the taco 🌮 recipe too thank you 👍🏼

Make a sort of chilli with the mince and have it on top of the fries then top with whatever you want. Food of gods!

Some ideas:

A variation on Thai krapow mince with Thai basil (not sure if you have any) using your chilli, soy sauce and lemongrass. So good with crunchy green beans and plain rice!

Similar recipe could be for a veggie version of Szechuan pork mince stir fry with green beans (again delicious with rice). The extra ingredients you need are some Chinese cooking wine, sugar, soy sauce and chilli/garlic sauce. Make sure you char the beans a little to add a delicious flavour!

Second keema mince with some green peas for contrast.

I've never tried but could you use the veggie mince and some binding agent and breadcrumbs to make meatballs, burgers or with the addition of some oregano/parsley/chilli, a kofte kebabs? You could then make some pita bread if you have plain flour, yeast, olive oil and salt.

Also, if you have some veggies (aubergine / potato / courgette) and could make a creamy béchamel sauce, would your OH tolerate a mousakka?

I make a lovely meatless meatloaf with quorn mince. I basically fry it with an onion, add a bit of Henderson’s relish or Worcester sauce (but that’s not veggie) and then mix it with a pack of made up stuffing mix. Give it a good mix together and put into a lined loaf tin. Bake in oven for around half an hour.
