can you make a chicken pie sauce filing in advance ,cool it and fridge it until later of will it go funny?

Just wondered as would be easier to make before kids get home

It'll be fine. Make sure you cook it thoroughly the second time (in the pie, I mean).

I use a tin of cambells chicken soup in ours but making it fresh is what I really want to do

Well I got the idea from The dinner lady book by Jeanette Orrey. But changed it a little by quantities and using chicken instead of turkey and gammon instead of cooked ham.
Make up your usual pastry for lid.
chop up an onion and prepare a mix of veg.
fry two chicken breasts cut into chunks with the onion in a little oil until coloured. Add enough water to cover meat and simmer until tender. Add mixed veg and (cubed)gammon and cook for a further 5-10 min. Drain stock and set aside 300ml, mix with half juice of a lemmon and 300ml of milk.
Make sauce by melting 55g of butter in a pan and add 55g of flour and continue as you would by making any basic sauce by adding the milk/stock mixture and cooking until thickens. mix with chicken/veg mixture until required amount of sauce is needed. place in suitable dish and cover with rolled out pastry and bake for 35-40 minutes on 190 degrees or gas 5

sorry not quite sure on the exact quantities I use as I just sort of throw it together but its not critical and kids always love it. The lemon juice does seem to curdle the milk/stock mixture when added together but its like that in the receipe book. Once all cooked up it is fine. I have made the mistake of throwing it away in the beginning thinking the milk was off but later discovered it always happened and was the lemons fault. Real tasty and definately recommend it. Thanks for answering my question fleacircus Dont wanna kill anyone off!
