Very foodie veggie Christmas ideas for meat eaters (who are unhappy at a veggie Christmas)

Just that really! We’re hosting this year and BIL and SIL and MIL are making snarky comments about the fact that it’s a veggie Christmas (my lot are all veggie, as am I).

They’re welcome to not come Grin but they still want to!

SIL a huge food snob, but not in a bad way. What would you serve a meat-loving foodie as a veggie Christmas lunch?

I know the regulars like nut roast etc. But looking for links to absolutely incredible recipes, of any kind, that you’d highly recommend!

I want to prove to them how delicious a veggie Christmas can be!

something onvolving pastry - a spanakopita ring 'christmas wreath'.
Or a chestnut and mushroom pie with pastry holly leaves on
Or a gorgeous cheese and chive quiche

Fresh pasta pumpkin ravioli in sage butter
Pasta trompetti with goats cheese, artichoke hearts, sundried tomatoes, good olives, roast peppers and onions and rocket.

I wouldn't break your back, because no matter what you cook, it isn't going to be roast bird and sticky gravy. Some of the pastry suggestions sounds delicious, maybe a nice spiced pilaf with loads of nuts and some dried fruits. A really good cheese board 👌

We are meat eaters but are doing a veggie Wellington on Christmas Day as prefer it to Turkey/chicken. Going to do some pigs in blankets though!

Puff pastry, roast butternut squash, mushrooms, cranberries, leeks, possibly some blue cheese, chestnuts. No recipe, just cram it all in and hope for the best!

I’m looking at doing Anna Jones’s Celeriac and sweet garlic pie. Looks fab.

I'm doing vegan pigs in blankets with Linda McCartney sausages wrapped in Quorn vegan ham as our main, always thought they were the best bit anyway but they would obv go alongside something else very well too. I have heard very good things about the new Richmond vegan sausages too.

I'm not a veggie but keep wanting to give this veggie wellington a try:

I'd make sure there are lots of familiar side dishes, roast and almondine potatoes (creamy mashed potatoes rolled into balls then rolled in flaked almonds then baked. Brussels sprouts in a cheesy sauce topped with breadcrumbs. Sage and onion stuffing (or use Linda mcartney sausages to make a 'meaty' chestnut stuffing). Carrots, parsnips etc and whatever centre piece you decide on.

For veggie sausage I can totally recommend the new Vegan Richmond sausages, yes, that Irish brand for real meat products. They use the same spicing mix and they are amazingly like cheap sausage, so if you made some sort of piggy-blanket-type-thing with those, they would be pretty traditional.

Please don’t serve them quiche or pasta on Christmas Day!

Seriously, there are loads of amazing veggie centrepieces online - go for Jamie Oliver or BBC Good Food for simplicity.

If they criticise the food don’t invite them again.

Though do remember that often people who eat meat and chose to make a massive deal about it are not all that likely to be happy regardless of what delicious efforts you have done sadly.

Ooh these ideas are brilliant, thank you!

Yes they do make snide comments about us all being veggie every now and again. It’s annoying, I just bite my tongue!

Determined to knock their socks off. Or maybe just knock my own socks off, and sod em Grin

These suggestions have got my mouth watering!

I made this yesterday for a Christmas dinner: www.olivemagazine.com/recipes/vegetarian/squash-and-ricotta-croissant-wreath/

It was mega easy and bloody lovely, and looks really pretty if you decorate it with feta and fired cranberries.

Not that they deserve it, from the sound of it!

Mushroom and chestnut puddings.
I've made them several times, we're omnivores and we love them.

I think the key is not to emulate a roast. It really will always be substandard (sorry, I know that is controversial) yet vegetarian food in general is often more exotic and experimental than cooking meat. But just look for inspiration from India or the Middle East or a myriad of other cuisines. Do your family eat fish?

I wouldn't go for a traditional Christmas dinner as no matter what it will be all about the missing turkey. I don't know how you feel about it, but when my ILs visit I just make a 'token meat dish'- last year I chucked a lump of beef into the slow cooker , which was very low ick for me and went down very well, but I understand if you'd rather not. Otherwise I'd go completely non-traditional and cook something like a South Indian banquet.

I am so confused by those saying do not emulate a roast! The best bit about the roast are the roast potatoes! I love going over to my step mum's for roast and she always does a nut roast!

Get everything else right and they will barely notice the meat missing. With all the trimmings theyll be so much to enjoy still! Also, my mum actually makes her stuffing without any pork (or any meat)

I'm doing things from Nigel Slater's meat free Christmas. There's a beautiful looking casserole thing served in a butternut squash and basmati with pomegranate and pistachios. Some people are never happy though!

I would involve pastry and cheese, probably something like this:

with a side of braised cabbage and rosemary/garlic roasted charlotte potatoes.
