Wow me with an amazing Christmas Eve meal idea

I want to seriously impress, new man, my family, no kids, ideally vegan (so I don't have to cook two things) hit me with ideas. I'm all blank ... parents don't eat anything vaguely exotic or with spice otherwise I would make Moroccan or Lebanese food

We have an amazing selection of hors d'oeuvres/finger foods, cheeses, olives, chilled prawns, etc. It's really nice because you can eat as you please throughout the night and have fun mingling and chatting. I have never had a sit down meal for Christmas Eve.

Also, the hors d'oeuvres/finger food route would be great for having vegan and non-vegan offerings.

Pizza with butternut squash and sage sauce rather than tomato. Thin slices of sautéed potato in place of cheese. Toppings of cranberry sauce dots and chopped chestnuts. Serve with stir fried Brussels sports (sliced not whole) with a drizzle of sesame oil and balsamic.

Butternut squash/pumpkin and sage risotto.
Hearty and warming, super delicious and seasonal.
Parmesan added for the non vegans.

Easy to batch make too and people can serve as much as they like.

I've served this to loads of meat eaters (of which I am one) and it's always been a winner!
