Victoria Sponge with jam filling

125 gm self raising flour, sieved
125 gm caster sugar, sieved
125 gm softened butter
2 eggs
1 tsp vanilla essence
1 tsp baking powder

Place all in mixing bowl and beat with electric mixer until pale in colour (2-3 mins).
Pour into lined 18 cm sandwich tins and bake in oven at 180 C (Gas 4) for 20 minutes or until cooked in middle.
Cool and turn out onto rack.
Sandwich with jam and sieve caster or icing sugar over top.
