Please. I've tried a load but never quite happy! I want them slightly crisp, not cakey or doughy, but still melt in the mouth.

It might be the technique as much as the recipe

Must be made with butter, not a substitute. Must go into the oven from chilled, not room temp. Plain flour with a sprinkle of baking power will make them slightly crisp on the outside

You're right it is the technique! Just attempted the river cottage recipe and ended up melting all my choc chips into the batter 🤦‍♀️

Put cookie dough in fridge before baking - that works!
