Nice vegetable/salad recipe for a picnic? Thinking along the lines of roast veg or something rather than salad as such ...

No one ever eats salads at picnics it seems - other than potato salad, coleslaw etc which I'm not keen on. Not mad about pasta/rice/couscous salads either ...

Was thinking maybe of roasting some root veg - not very summery I know but tasty, though the ILs will probably think me weird for serving them cold.

Or maybe some kind of layered potato and sweet potato thing .... or a tortilla with plenty of veg in? Any thoughts? I'm a bit of a recipe follower so actual recipes particularly welcome

Make a fritatta(an Italian version of a Spanish omelette) with courgette, herbs and feta cheese. It is easy and delicious cold.

Sorry I don't have a recipe but if you google one it should be easy.

Oh yes Nigella does a nice courgette frittata recipe - hers is with parmesan rather than feta but very simple and yummy.

giant sandwiches good (hollow out nice uncut loaf and layer with fillings - boiled eggs, roast veg, ham, chicken, whatever - then stick lid back on, weight it down and slice into sections)

oh and giant sandwich even nicer if you add lots cheese, wrap in foil and warm in oven just before you go out - wrap in teatowels and serve warm.

Mediterrranean veggies roasted are delicious cold with balsamic vinegar and perhaps feta crumbled on top. Courgettes, peppers, red onions, aubergine, etc. Yummy.

Olive - bbc good food site is so much better than the bbc food site - hadn't realised - thanks

Am moving in the frittata direction ... Other ideas lovely too - frittata just easiest for me, and least likely to offend the fusspot ILs

we get the mag occasionally but usually just go on the website

This one looks good - a beefier (and more tortilla-y than omelettey) version of the Nigella one I usually make ...

our favourite summer salad at the moment is rocket with sliced strawberries, goats cheese with roasted pinenuts. Drizzle some runny honey over the top and slpash liberally with balsalmic. Lovely with a french stick and very summery......even better with a bit of smoked cold chicken or duck....
