Healthy lunch ideas for a new mum

My sister's just had a baby (also has a 2 year old) and I want to take her a few day's worth of easy, healthy lunches, each time I visit her.

Does anyone have ideas for things that will happily sit in the fridge for a couple of days, and are also healthy and nutritious for a breastfeeding mum? Or things that will freeze well?

She is quite a plain eater.

So far I can think of tuna pasta salad with peas and sweetcorn, and pancakes which can be frozen. Also frittata.

Bonus points if they can be eaten cold, with one hand, and would also appeal to a 2 year old :-)

I would probably buy a really nice loaf of bread, a box of eggs, some pate, cheese (including soft cheese like Philadelphia and Babybel), hummus and a big tub of yoghurt to put in her fridge then some oatcakes/Ryvita, baked beans, tinned fish (tuna/sardines) and soup for her cupboard
Then I would make her some soup and divide it into portions which she can just reheat in the microwave or in a pan and have either in a bowl or a mug,
I would roast a chicken that she can pick at /use for sandwiches, make a frittata, some falafel and cook some good quality sausages
and deliver those with some fresh fruit (bananas, satsumas, apples etc) which can be quick and easy snacks and some ready washed salad
That should then give enough bits and pieces for her to be able to put together what she wants/feels like each day

My go to at the moment is cous cous with lime juice, tomatoes, cucumber and feta. It is delicious and can be switched up if you want to, would be nice with corn or olives too.
