Does anyone have a tried and tested foolproof recipe? I would like to make dd a birthday cake she can actually eat!

I am lazy so would do a normal Victoria sponge with non-dairy marg

Or there's Nigella's Party Cake:
Whisk 6 egg yolks with 200g caster sugar till creamy, fold in 200g ground almonds and the zest of a lemon.
Whisk 6 egg whites in a anotehr bowl, beat a spoonful of white into the yolks and then fold the rest in gently.
Pour into a 1.5l tin (she uses a brioche tin but I don't have one so use a ring mould thing) and bake 1hr 160 C

she also does a clementine version

My DD is allergic to milk and I just do a normal sponge with dairy-free marg as MrsB suggests. Either Pure or Vitalite work well for baking.

I make this every year for my dds class at school and it always goes down well.

Chocolate sponge

Beat until very light - 3 egg yolks
Gradually beat in 200g sifted sugar
Beat in 60 ml hot water

Sift together 100g plain flour, 25g cocoa powder, 2 teaspoons baking powder

Add the sifted ingredients gradually to the yolk mixture. Stir until blended.

Whisk 3 egg whites until stiff. Fold into batter.

Bake at 180C for 35-45 mins
