What can I do with too much Alpro soya yogurt?

I have somehow ended up with four 500g tubs of the vanilla yogurt, and my main soya-yogurt-eater has gone away for half term. I cannot eat that much soya. What can I do with it?

I have a cake recipe that will use up half a pot. The recipe calls for plain dairy yogurt, but I think it might work.

Any other suggestions? I have very little freezer space ATM.

Make fruit fool.
Serve on breakfast cereal.
Use instead of custard and cream.
Make cheese cake or deconstructed cheese cake.
Pile into a Pavlova or make Pineapple Romanoff.

My favourite breakfast at the moment is berries/banana at the bottom of a glass, alpro spooned on top, granola on top of that then a squeeze of honey. Delish!

How do you make it into cheesecake?

I'm the only one at home who will eat it as yogurt, and I cannot eat that much (it gives me hideous wind!). The others will not eat it as yogurt in any form, and in all these - delicious! - suggestions it's still recognisable as yogurt.

The BBC Food section has got a feature on cheesecake today with loads of recipe ideas. If you don't have time today, just search their recipes when you've got a few minutes.

Ohhhh I think I might just have try this baked banana cheesecake!

Does soya yogurt behave in the same way as dairy yogurt - can you thicken it by draining in a muslin overnight?

Dd, who normally won't eat the stuff at all, just put away half a big pot in a berry smoothie Grin

Cake in the oven.

It's nice in fruit or on cake instead of custard.

If it was the plain one you had, I'd have recommended putting it in mash. It makes it so creamy.
