was going to make beef casserole and dumplings but it's WAY to hot for that and it HAS to be used today or thrown away (which I don't want to do).

I'll be back in about 1/2hr to see what you've suggested as DS3 has just woken so you don't think I'm ignoring your suggestions.

bump - this is urgent (honest )- it's going to take at least 1 1/2 - 2hrs to cook it (I know that much LOL) and dinner needs to be ready by 6.30 (latest).

The problem is that if you don't cook v slowly it will be tough as old boots
can't you freeze it and do something else tonight?

nope can't freeze it have to use it today as it's been defrosted. I know I'll have to cook it slowly - that's not a problem - I've got time to do it - just don't know what else I can do other than stew/dumplings/casserole etc with it.....

Can't you stick it in a slow cooker/casserole dish with mushrooms/onions/herbs and cook it, then freeze it for a colder day and meanwhile make something else.

would it be totally wierd to do a sort of casseroly/stewy type thing and serve it on Cous Cous? Dumplings (or potatoes even for that matter) just feel too 'heavy'.....ARGHHHHH I should have bl**dy thought of this earlier when I popped to Morrisons and picked up something lighter to eat - got nothing else to cook until I go shopping properly tomorrow.

fannyannie, the couscous idea sounds lovely to me, like a tagine. I'd add garlic and tomatoes and a bit of chilli powder too

right let me go and get it sorted so I can stuff it in the oven for a couple of hours then I can sort the Cous Cous once it's ready. Thanks
