My version of "The Dinner Lady" recipe - St Peter's Mud Pie - blooming gorgeous!

Had the need to cook with the boys yesterday (who immediately found something far more interesting to do....)
Thought I'd share this with you - very nice, although hasn't done me any favours with my Slimming World regime! Like to think leaving out the caster sugar made a small difference, however I made up by using far too much melted chocolate!

8oz crushed weetabix (orig recipe says digestive biscuits)
2oz glace cherries
5oz butter
1tbsp drinking chocolate (only had Green and Blacks )
4oz caster sugar (left this out - sweet enough already!)
4oz raisins / cranberries (orig recipe says mixed fruit)
4oz milk/dark chocolate (orig recipe says milk choc)

Break biscuits into smallish pieces. Wash glace cherries of sticky coating and chop into smallish pieces.
Melt butter in saucepan. Add drinking chocolate and sugar (if using) and glace cherries. Mix until combined.
Line a 18-20cm (8-9") flan tin with foil and pour in mixture. Press down with back of a spoon and chill for 2 hours (the cake, not you!)
Break choc into pieces and melt over indirect heat. Pour melted choc over top of chilled mixture and spread using a palette knife. Chill until set. Cut into pieces and die happy!
