Buffet contribution ideas please for fussy folk

As above really, shared table over Easter.
8 adults with large appetites but some have strong dislikes oh joy!
Host ( plain cook and can be a bit prickly) doing side of salmon and gammon (cold).
So I thought an antipasti style platter with chorizo, prosciutto etc and mango, melon, salad leaves with just olive oil and balsamic but that means it's all very protein heavy or would that be ok?
DISLIKES are pasta, anything remotely spicy, prawns, egg, cauliflower, broccoli, cold new potato, raw tomatoes.
It's a buffet on plates with cutlery not finger food. Something to take prepared and heat would be okay but I'd prefer cold.

A rice dish maybe? We go for either egg fried, mixed veg with the rice cooked in a stock, or mixed veg with chicken in it as well. Sometimes we had a basic risotto to cater for fussy eaters.

I'd take things that would go with the salmon or gammon but didn't add much in the way of protein, perhaps feta, watermelon & leaves, or watercress, pink grapefruit & avocado.

What about a couple of quiche, a veggie one & a classic quiche Lorraine? Or a giant sausage roll that can be sliced and served. Can't go wrong with pastry if you ask me. If I know that I've got guests who are fussy I still do salad but keep the component parts separate so a bowl of lettuce, grated carrot, sliced or cherry tomatoes, cucumber, onion etc in smaller dishes

Potato or egg salad, they would both go with salmon or gammon
some really nice bread and soft real butter
Green bean salad

Can you do any hot food?
Hot new potatoes/wedges
Garlic or just plain bread
Coleslaw or a slaw with vinaigrette

How about some sort of couscous salad? My favourite is made with harissa and roasted veg but you could make it plainer with spring onions, peas, maybe some new season asparagus?

If they are really fussy I’d go French stick. Maybe ciabatta or focaccia if you think they would eat it! Coleslaw, celery nut and sultana. I was going to say tomato, mozerella and basil salad but see raw tomatoes are out!

Thanks all, I'm grateful for all the ideas.
As a few suggested, I'll go with things to accompany the salmon and gammon.
Feta and watermelon sounds good as does coleslaw and green bean salad and I might make some rhubarb chutney of some sort as there is a glut in my garden!

Rhubarb and orange compote (cold) is a lovely light springtime pudding, and quick and easy to make.
