The summer hols are pretty much done...

I work full time and have DD.

I want to get organised food wise.

In from after school club/work - tea, done.

Any recipes ideas?

I'm up for batch cooking.
I own a slow cooker.
DD not a fussy eater but doesn't like things really spicy.

Help!

Slow cooker recipes like Bolognese, stews, pulled pork in bbq sauce, mild chilli con carne and korma as you don't like spicy food, Meat cooked in gravy on the slow cooker.
Stir fry's are quick too

Can you make risotto in a slow cooker, or oven cooked risotto? It's good for using up an assortment of vegetables, and usually popular with the whole family.

I know exactly what you mean re back to reality- the holidays are so long it sort of feels like a different time zone! I'm getting prepped to go back myself

I batch cook ;

Cottage / shepherds/ lentil pie
Bolognese
Lasagne
Chicken and leek pie
Mince beef and onion pie
Corn beef stew
Soups of many varieties

And I slow cook ready for home

Spinach and red lentil Dhal
Baked potato's
Beef and onion stew
Lamb shanks
Pork and bean stew
Sausage casserole
Chorizo and butter bean casserole

Finally my fast meals for when I've nothing prepared

Omelette
Pasta carbonara
Pasta Alfredo
Pasta with cherry tomatoes and basil
(Lots of pasta meals)
Beans on toast
Fried chicken on butter bean mash
Salmon and veg stir fry

@sayinggoodbye - thanks, a good refresher list. A lot of new ideas and a few of our faves I'd totally forgotten about.

And jacket potatoes in the slow cooker, that's going to become a regular. 🥔🥗

I’m past this stage now, but when I worked full time I’d cook a massive pot of mince (beef, turkey or veggie) with onion and basic spices, then portion it out. This can be the basis of bolognese, lasagne, moussaka etc.

Similarly, cooked chicken pieces, meatballs etc in the freezer and frozen or jarred good quality tomato sauce are a great standby.

Another thing my kids loved was sweet and sour chicken, actually just chicken fillets in breadcrumbs or batter with a jar of sauce and frozen stir fry veg. Chicken fillets in oven for 20 minutes warm sauce in microwave with veg. Dinner in 30 minutes.
