Mince - ideas?

Got mince thinking I'd do something 'interesting' with it (ie not bolognese, meatballs or burgers), and found myself empty.... I want to branch out, and it's just for 2 of us, and we'll give most things a go.

So, ideas please?

Ottolenghi peppers stuffed with mince and rice (meant to be lamb mince but sure it would work!)
Chilli for tacos/ burritos

normally I do it with lamb mince but lahmacun are delicious. I know lasagne doesn't sound very "branching out" but Ottolenghi porcini and pork lasagne is very good www.theguardian.com/lifeandstyle/2017/oct/28/lasagne-recipes-chard-mushroom-pork-seafood-yotam-ottolenghi

Fry with onions and garlic. Add cinnamon and salt and pepper . Wilt a pack of spinach into it. Then stir through half a pack of crumbled feta
DC really liked this - from a Tesco magazine. Suggested to serve with baked sweet potatoes

My brother (who will be the other eater) has just sent me these two links:

so I think the expectation is that I will do one of those. Probably the Turkish meatloaf as I have never had meatloaf in my life.

I wonder if those ingredients would work with beef mince, as it does say pork. I haven't got apricots or cashews; do you think prunes with beef instead of apricot, or not?

I'd go with prunes with beef - I regularly cook this from Moro - beef and prune tagine - but with stewing beef not mince - but I'd transfer the prunes over to your recipe
