Ideas to use up chicken breasts and beef mince please

Have just bought a LOT of meat, portioned and frozen it so now I’m looking for ideas for good family meals so it doesn’t all just stay in the freezer!

Would anyone be kind enough to share their favourite (ideally quick to prepare - under 30 minutes) family meals?

We like this dish with the lamb mince subbed for beef and I roast some courgette or peppers and sub for the aubergines.

I often pre prep hunter's chicken and bag them up separately, but it's maybe a bit late for you if it's all already frozen
..just slice the chicken breast open like a book, bash it out a bit if you cba, add in a stick of cheese about the size of your thumb, wrap chicken around cheese and then wrap a couple of bits of streaky bacon around the whole thing to keep the chicken around the cheese

to cook them I let them defrost, and sit them in a shallow dish with the sauce...you can use jar sauce, or I often go through the fridge and use up odd bits of ketchup,pesto, BBQ sauce with a sploosh of wine or cider and then into the oven for 30 ish minutes until cooked through.

ALso have a scoot about pinterest for freezer ready meals...there's lots of inspiration there for meals where you do all the prep, shove it all in a bag and just freeze that so on the day you just let the bag defrost and tip the whole thing into a slow cooker or oven dish
