Veggie main and pud with lamb shawarma

Inspired by an earlier thread, I’m cooking lamb shawarma for friends tmrw eve, with cabbage slaw, seasoned yoghurt and flatbread.

I do need 1 veggie main - maybe a roasted aubergine?

And an easy pud to follow. LOVE pudding those and for me that’s a real treat. Something fruity to follow lamb, like lemon posset? I’m the veggie, so bit clueless.

we did a roasted veggie skewers some with the same spices as lamb dish over a bed of middle eastern recipe couscous
groegeous middle eastern veggie rice dish
a bhudda bowl with some middle eastern flavoured chickpeas.roasted tomatos and aubergine.bulgar wheat and lentil with a light lemony dressin
marocon roasted cauliflower and chickepeas with sweet potato wedges
hummus
red onion tomato and cucumber mint salad.
deli style pasta salad
chickpea and veg stew
these are all we had success with lamb shawarma
for pudding
a lemon tart
mini cheesecakes.
white choc and raspberry baked cheesecake
pavlova or eton mess
profiteroles.
jazzed up knicker bocker glory

My favourite dessert, based on a Cafe Moro recipe... dead easy, quick, and loved by all. It also fits with your shawarma theme. Soaked orange cake.

6 eggs separated
240g caster sugar
230g ground almonds
Grated zest of one large orange

Whisk egg yolks and 210g sugar until pale. Add almonds and zest. Whisk egg whites with 20g sugar until stiff, fold into egg and almond mixture.

Line a 23cm round tin, or preferably a 23 x 27 cm tin with grease proof paper, fold paper don't cut.

Bake at 180c, 40 mins, check after 30 min, until a skewer comes out clean. Cool, lift out of tin, ease away from paper, then replace in tin and prod all over with a skewer or knife.

Make a syrup with

Juice of the orange
2 tbsp honey
1tbsp orange flower water (optional)

Boil orange juice and honey until it starts to thicken and bubble hard, then add orange flower water.

Pour over the cake, leave to soak, ideally a day. Serve with whipped cream.

I don't know what your lamb recipe is like so maybe not compatible but we have done a brilliant Aubergine Shawarma from a Hello Fresh recipe which is absolutely delicious and quite easy to throw together

With a little juggling of quantities you could do a big pot of the chickpea sauce and have that as an accompaniment to the lamb too (I'd assume a third- or half-portion of the chickpeas per head for the meat eaters as lamb is more filling than aubergine. I'd probably do a bit extra of the aubergine too as chances are some of he meat eaters will want some)

It would then feel like a single integrated meal which is nice when eating as a group.

kateandme those all sound amazing!
I am trying to stay simple, and found a burnt aubergine and red pepper recipe on bbc food, with good flatbreads, tomato and cucumber salad, slaw.

Then trying an Anna Jones roasted fruit pavlova.
